Pumpkin Cake Roll

This is my family's favorite...

3 eggs
1 cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice
3/4 cup flour
1 teaspoon baking powder
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup chopped pecans (optional)

Beat eggs 5 minutes, gradually add sugar. Mix in all ingredients except nuts. Grease and flour large jelly roll pan. Bake at 375 degrees for 10-15 minutes (or until done). Turn onto a powdered sugared cloth and roll. Unroll before too cool and fill with:

1 cup powdered sugar
8 ounces cream cheese
4 tablespoons butter
1/2 teaspoon vanilla
nuts

Beat until smooth. Spread over cake. Roll up. Wrap in plastic and then foil and refrigerate...good and rich served with whipped cream.
